chopped cabbage slaw salad
If you know me, you know how much I love slaw. It’s such an easy, versatile side dish, chock full of fresh veggies, and easily switched up for what ever flavor profile you are looking for.
This is a quick, easy, and favorite version.
Ingredients:
1 head of green cabbage, sliced, then chopped into squares
2 red bell peppers, sliced in strips, then chopped into squares
2 tomatoes, halved, quartered, halved again, seeded, then sliced and cut into squares
1 large or 2 small cucumbers, peeled, halved, seeded, then cut into cubes
1 head of italian parsley, leaves removed and chopped (or 2 T dried parsley)
4 green onions, sliced
2 Tbsp avocado oil
2 Tbsp rice wine vinegar
2 tsp salt
Directions:
Combine all ingredients together in a large bowl. Toss until mixed.
Serve.
Will last in the refrigerator for 3 days.
