honey thyme carrots
This is one of those, super simple, easy to make, pleases everyone recipe.
Beyond that there’s barely any ingredients, it goes with everything, and can easily be thrown in the oven for some quick cooking.
Plus, I don’t know about your CSA, but mine always has carrots. And everyone in my household of 6 loves carrots. It’s a win-win.
Ingredients:
16 carrots, peeled
1/4 cup evoo
1/4 cup local honey
1 tsp salt
7 sprigs of thyme, divided use, stems discarded
Directions:
Preheat oven to 425.
Line an oven safe baking tray with parchment. Toss carrots with honey, evoo, salt and 4 sprigs of thyme leaves.
Roast for 10 minutes, then turn carrots.
Roast for 10 more minutes, then turn carrots.
Roast an additional 5 minutes.
Remove from oven, sprinkle with leaves from 3 sprigs of thyme.
Serve.
