winter spinach salad
This is your perfect starter salad for holiday entertaining. Not only does it look festive, but it’s deceptively simple, but a full on flavor bomb.
My husband, who likes vegetables, but dislikes salad, says he could eat this salad every day.
This recipe is for four starter or side salads.
Ingredients:
2 cups packed spinach
5oz pancetta
4oz orange blossom honey goat cheese
4 Tbsp pomegranate seeds
1 avocado, pitted, peeled and chopped
1/3 cup champagne vinegar
1/3 cup avocado oil
1/2 tsp salt
1 tsp dijon
2 tsp sugar
1/4 tsp white pepper
1 clove garlic, smashed and minced
1 Tbsp minced shallot
Directions:
In a mason jar, combine vinegar, oil, salt, dijon, sugar, pepper, garlic and shallots. Shake to combine.
Brown panchetta in a cast iron skillet. Set aside to drain on paper towels.
Divide spinach between 4 plates. Top with goat cheese, avocado, and pomegranate. Drizzle dressing over the salad. Top with panchetta.
