bacon wrapped scallops on the grill
Only one of my kiddos loves scallops; which makes me feel like I’ve completely failed as a parent. My mother in law always ordered the scallops everywhere; and the hubs and I love them grilled, fried, raw, etc.
I guess I should take it as a win that the one scallop lover, loves them. So much so, he’s always begging for us to make them. So we do. And the three of us get to thoroughly enjoy them and not worry about sharing.
This is our favorite summer version complete with wrapped bacon and a smoked flavor that’s beyond delish.
Ingredients:
16 scallops, foot removed
6 slices of bacon, cut in 3rds
2 Tbsp evoo
Directions:
Soak 16 toothpicks in cold water for 3 hours prior to grilling.
Preheat grill to high.
Wrap each scallop with bacon piece, stretching (this helps to cook the bacon faster so it’s done at the same time as the scallops) it as you wrap them, and securing it with a soaked toothpick.
Grill for a total of 12 minutes, but flipping every two or so, all around the bacon, and the top and bottom of each scallops.
Remove from grill and serve.
