grilled lamb sliders

I’m just gonna say it. These lamb sliders are the perfect summer alternative to gyros.

They are almost meatball like, and as such, fit perfectly in homemade pitas.

It’s a perfect handheld bite. Especially when topped with homemade tzatziki and all the fresh vegetables.

And pickled onions. And pepperoncinis.

Ingredients:

2 lbs ground lamb

1 Tbsp minced fresh rosemary

1 Tbsp fresh minced italian parsley

1 small white onion, grated

3 garlic cloves, grated

1 Tbsp dried dill

1/2 Tbsp trader joes onion salt

1 tsp salt

1 egg

1/2 tsp ground black pepper

16 oz kefir yogurt (lebne)

1 cucumber, ends removed and grated, then strain in kitchen towel to remove liquid

juice of 1 lemon

1 Tbsp white wine vinegar

1 bunch dill, stems removed and chopped

1 clove garlic, minced

1 tsp salt

1 tsp honey

romaine lettuce, sliced

tomato, quartered and sliced

cucumber, sliced

pickled red onions

pepperonchinis

red onion, peeled, and sliced

1 cup water

1 cup apple cider vinegar

1 tsp salt

1 Tbsp sugar

Directions:

Bring vinegar, water, 1 tsp salt and 1 Tbsp sugar to a boil. Place sliced onions in a glass jar. Pour boiling liquid over onions. Set aside to quick pickle.

In a bowl, combine yogurt, grated cucumber, lemon juice, vinegar, fresh dill, 1 clove minced garlic, 1 tsp salt and honey. Let sit for flavors to develop.

In a large bowl, combine lamb, rosemary, parsley, grated onion and garlic, dried dill, onion salt, egg, 1 tsp salt, and black pepper. Use hands to combine and form small patties.

Preheat grill to medium high heat.

Grill patties until cooked through. About 7 minutes per side.

Assemble pita with tzatziki, patties, lettuce, cucumbers, and tomatoes. Top with pickled onions and pepperonchinis.
