grilled scallop tacos
I promise you. These might be the best tacos I’ve come up with yet.
The scallops on the grill are perfect. The combo of chunky avocado and bruschetta salsa are amazing.
It’s the perfect summer taco.
Ingredients:
1 lbs scallops
3 Tbsp avocado oil
1/2 tsp paprika
1/2 tsp salt
1/4 tsp pepper
1/2 tsp trader joes’ onion salt
juice of 1/2 a lime
chunky guacamole
bruschetta salsa
street tortillas
Directions:
Remove ‘foot’ from scallops
Soak skewers in water 2 hours before grilling.
In a bowl, toss together all ingredients.
Heat grill to sear.
Skewer scallops 5 to a skewer, horizontally.
Grill for 90 seconds to 2 minutes per side, long enough for grill marks. Remove from grill and let set 10 minutes before serving.
Place scallops on tortillas, and top with chunky guac and bruschetta salsa.
