coconut milk grilled chicken summer salad

Another summer day, another perfect summer salad.

And, as y’all know, I love my salads choc full of all the fresh things. And in this case, we threw some prosciutto, chicken, and pistachios in there for good measure. And then topped it with my coconut milk herbed-ranch salad dressing.

I could totally eat this salad on repeat.

Ingredients:

1/2 bag arugula

2 medium heirloom tomatoes, halved and sliced

1 nectarine, pitted and sliced

1/2 avocado, sliced

1 oz proscuitto

2 coconut milk marinated grilled chicken cutlets, sliced

herbed coconut ranch dressing

Directions:

Lay down a bed of arugula. Top with all the things. Drizzle with salad dressing.
