marinated and dry rubbed tri tip

I absolutely love tri tip. Pretty much anyway I can get it.

And this variation is no different.

The meat is marinated for 4 hours, then dried off, and dry rubbed.

And lets face it, tri tip screams football season, which we are smack dab in the middle of.

To make it even easier, toss together a side of slaw, throw out some rolls, bbq sauce, and pickles, and let everyone serve themselves.

Ingredients:

1 cup shredded carrots

3 large cloves garlic, peeled

1 yellow onion, peeled and quartered

5 stalks of celery, ends trimmed and rough chopped

4 cups beef stock

2lbs tri tip

1 tsp trader joes onion salt

1 tsp paprika

2 Tbsp white sugar

1 tsp salt

1/2 tsp white pepper

Directions:

Blend together carrots, garlic, onions, celery and beef stock.

Once combined and blended, pour over tri tip in a large ziplock. Let sit in the fridge for 4 hours.

Remove from fridge and discard marinade. Wipe marinade off.

Whisk together onion salt, paprika, sugar, salt, and pepper. Rub all over tri tip and let sit outside of the fridge for 30 minutes.

Preheat grill to 450.

Grill for 10 minutes on one side.

Flip. Grill for another 10 minutes.

Let rest for 10 minutes, covered.

Slice against the grain.
