roasted parm broccoli
File this under sides you never knew you needed but now must have.
Ingredients:
2 medium heads of broccoli
4 Tbsp white wine vinegar
4 Tbsp evoo
1 Tbsp whole grain dijon mustard
1 tsp salt
1/2 tsp white pepper
1 tsp lemon zest
1/3 cup fresh grated parmesan
Directions:
Preheat oven to 400.
Cut broccoli into florets.
In a bowl, toss broccoli with vinegar, evoo, dijon, salt, and pepper. Until coated.
Pour onto a parchment lined oven sheet pan.
Roast for 20 minutes. Toss.
Roast for 20 more minutes.
Top with parmesan and lemon zest right before serving.
