Okay, can we talk for a minute about radishes?

They are this underrated, spicy, peppery vegetable, that are reasonably easy to grow, found in every grocery store, and never get the credit they deserve.

You’re probably used to having them on a salad, or as a potential taco topping.

But, I’m here to tell you that they are the under sung hero of roasting. I kid you not. If you haven’t roasted radishes yet, you aren’t living your best life. My kids are literally obsessed with roasted radishes. (They also like them raw… but that’s our taco tuesday mentality kicking in).

Roasted radishes are something entirely different. They lose some of their pepperiness. They take on an almost potato-like consistency, and you literally can’t get enough.

Super easy. Super simple. Super delicious.

Ingredients:

2 bunches of radishes

1/2 tsp salt

1/8 cup evoo

Directions:

Preheat oven to 425.

Line a oven safe baking tray with parchment paper. Toss radishes with evoo and salt. Spread out.

Bake for 10 minutes. Toss. Bake for an additional 10 minutes.

Remove from oven and serve.
