5 layer salad with cilantro lime dressing

While tacos for taco tuesday are always a great choice, some times you just feel like a salad. This is a great salad that can be served as a side dish, a starter, or a main course. It’s also perfect for potlucks and/or bbq’s. And the cilantro lime dressing? That’s one you want to keep in your back pocket.

Ingredients:

1 head romaine lettuce, torn

1 package of bacon, cooked and crumbled

8 oz peas, blanched

1 bunch scallions, sliced

1 bag of black bean corn chips (I prefer bearitos)

3/4 cup avocado oil

1 clove garlic

1 egg

1 tsp dijon

1 tsp anchovy paste

1/4 cup white wine vinegar

1/2 bunch cilantro

juice of 3 limes

1 tsp salt

1/4 tsp pepper

Directions:

In a large glass bowl, layer ingredients as so. Lettuce, scallions, bacon, peas, and top with corn chips.

In a pint sized mason jar, use a immersion blender to combine mustard, dijon, egg, avocado oil, garlic, anchovy paste, cilantro, salt, pepper, lime juice and vinegar.

If you prefer, you can start with the egg, dijon, lime, oil and salt (like a mayonnaise base) and combine until you make mayonnaise, then add in the additional ingredients and blend again.
