sushi rice

This is my go-to recipe for all things sushi. Make your own sushi night at home, sushi rolls, crispy rice bites, poke bowls, etc.

Ingredients:

3 cups short grained sushi rice

4 1/2 cups of water

1/4 cup rice wine vinegar

2 Tbsp sugar

1 tsp salt

Directions:

Rinse rice under cold water, until water runs clear (this will take several minutes). Set rice to soak for 45 minutes in the 4 1/2 cups of water.

Bring rice and water to boil in a large sauce pan.

Once boiling, turn down heat to simmer and cover.

Let simmer 20 - 30 minutes, until water is fully absorbed. Remove from heat and let sit an additional 10 minutes.

In a small sauce pan, heat vinegar, sugar and salt over high heat, whisking to combine. Heat until sugar and salt have dissolved.

Place rice in wooden bowl. Pour vinegar mixture over rice, and using wooden spoons, gently mix in with rice.
