simple sautéed zucchini
Probably one of my favorite cooked veggies, ever. I adore zucchini. Grilled, fried, sauced, raw, and most especially sautéed.
This is the easiest side, I love it with a fried egg in the morning, or with noodles in the evening. Super versatile.
Ingredients:
2 - 3 zucchinis, tops and bottoms removed, and sliced
2 - 3 Tbsp evoo
1 tsp salt
Directions:
Heat a cast iron skilled to medium.
Add oil.
When shimmering, add zucchini and salt.
Stir occasionally, until slightly translucent and starting to brown.
Remove from heat and serve.
