lemon squares

I don’t think there is another dessert flavor profile that resonates with me more than lemon. I just adore lemon desserts.

I think it’s because of the sweet, tart play of citrus flavors. I mean.. lemon curd? Hello.

And just like lemon curd, these lemon squares? Are the perfect sweet bite of lemon you never knew you needed.

Ingredients:

3/4 cup flour

1/3 cup butter

2 eggs

1 cup brown sugar

1 1/2 Tbsp lemon juice

1/8 tsp baking powder

1/2 tsp vanilla

2/3 cup powdered sugar

1 Tbsp lemon zest

Directions

Preheat oven to 350.

Whisk flour, to “sift". In a large bowl, cut butter into flour (cut butter into small squares, and mix butter and flour together with hands until finely combined).

Pat mixture out evenly to cover the bottom of an 8 x 10 pan.

Bake for 10 minutes.

In a stand mixer, whisk eggs and add in brown sugar baking powder and vanilla.

Spread egg mixture over baked base. Bake an additional 20 minutes.

In a separate bowl mix together powdered sugar, lemon peel, and lemon juice. Frost bars with this mixture while they are still very hot.

Cut into 2 inch squares.
