Without fail, my go to order at any greek restaurant is chicken souvlaki (a fancy way of saying grilled chicken on a skewer). There’s just something about the herby marinade combined with slight char that pair so perfectly with pita, tzatziki and fresh veggies.

It’s also one of the staples of our at home greek nights.

Now, it can be yours too.

Ingredients:

5 chicken breasts, cut in approximately 2 x 1 inch pieces

1/3 cup evoo

4 cloves of garlic, minced

3 Tbsp fresh chopped oregano (approximately 6 sprigs)

2 Tbsp fresh chopped rosemary (approximately 2 sprigs)

juice of 2 lemons

1 cup white wine

1 tsp salt

1/4 tsp white pepper

Directions:

Whisk evoo, garlic, oregano, rosemary, lemon, wine, salt and pepper together in a large bowl. Add chicken and toss. Let sit in fridge for 2 hours before grilling.

Soak wooden skewers in water for 2 hours before grilling.

Preheat grill to high.

Place chicken on skewers, leaving 1 - 2 inches empty at each end.

Grill chicken approximately 7 - 8 minutes per side, until chicken is cooked through and golden brown with grill marks.

Serve with pita, tzatziki, lettuce, tomatoes, red onions or shallots, beets, greek olives and feta.
