quick and easy stove top tomato soup

Is there anything better than tomato soup and grilled cheese? I mean really?

Not only do I love it in the traditional sense, but I’ve been known to serve individual cups of soup, or shooters, topped with a slice of grilled cheese as a passed party app, or, at the end of a long night as a midnight snack.

This stove top version is extremely easy to throw together, and tastes like it was on the stove for hours.

Ingredients:

4 Tbsp butter

1 onion, chopped

3 cloves of garlic, peeled and smashed

6 stems of thyme (leaves only)

1 pint cherry tomatoes

1 cup white wine

1 jar luccini tuscan tomato sauce

2 cups chicken stock

8 oz heavy cream

Directions:

Melt butter in a heavy bottomed dutch oven.

Sauté onions and garlic on low until soft and translucent. Add thyme and cherry tomatoes to the pan. Continue to sauté until tomatoes begin to burst, stirring often.

Add in wine and cook for 5 minutes. Add in jar of tomato sauce and chicken stock.

Use an immersion blender to puree ingredients until smooth.

Bring soup to a boil.

Once boiling, reduce heat to simmer and add in cream. Stirring to combine.

Serve.
