pesto calzone

Sometimes you feel like a pizza. Sometimes you feel like a calzone.

Ingredients:

8 oz pizza dough

flour/cornmeal

green pepper slices

red onion slices

sliced mushrooms

ground, cooked, italian pork sausage

shredded mozzarella

pesto, homemade or store bought

ricotta cheese

Directions:

Preheat oven to 450.

Remove pizza dough from refrigerator about 30 minutes before working. Roll it into a ball and let sit on flour and/or cornmeal.

Once dough has sat out, roll it into a very thin circle.

Par bake crust for 3 minutes in middle shelf.

Top half of circle with shredded mozzarella, then vegetables, then sausage, then a few dollops of ricotta, then another layer of mozzarella.

Fold the empty half of dough over top, and crimp edges together.

Bake for about 10 minutes, until crust starts to brown and cheese has melted.

Remove from the oven and let rest 2 minutes before serving.
