shredded brussel slaw

Cole slaw but make it with brussel sprouts instead of cabbage. Trust me. It’s a winner.

Ingredients:

1 pint brussel sprouts, tops removed, and shredded about 2/3 of the way down so you just get leaves

3 pieces of cooked bacon, crumbled

2 stalks of celery, chopped

1 plum, pitted and chopped

2 green onions, sliced

1 Tbsp avocado mayo

1 Tbsp whole grain dijon mustard

1 Tbsp red wine vinegar

1 tsp trader joes onion salt

1/2 tsp salt

1/4 tsp white pepper

Directions:

Add brussels, bacon, celery, plum, and green onions to a large bowl. Toss to combine.

In a small bowl, whisk together mayo, mustard, vinegar, onion salt, salt, and pepper. Pour over slaw mix. Toss to combine.
