hatch chili burrito

Taco tuesday ultimate burrito idea.

It’s hatch chili season - but not for too much longer. Hatch chilies are usually only available in August and September. You can get them canned, but it’s just not the same.

I like to do as much as I can with them, while they’re here. And when they aren’t… well you can just substitute with the good old anaheim chili.

This particular burrito, is one of those that is easily thrown together using leftovers.

Ingredients:

burrito tortillas

jack cheese

hatch (or anaheim) chili, tops removed, and seeds scooped

favorite burrito fillings:

salsa

sour cream

cooked protein (steak, chicken, shrimp, eggs)

sliced olives

avocado or guac

cheddar cheese

tomatoes

onions

Directions:

Stuff chili’s with jack cheese. Broil, grill, or cook on the stove-top in a cast iron skilled, until cheese is melted, and chili has blistered.

Heat your protein choice.

Layer tortilla with cheddar cheese, then hot meat and chili. Top with fillings of choice. Wrap burrito and enjoy.
