watermelon cucumber collins

Went to disney to celebrate avy’s bday with her bbf. Had a lot of fun, and walked away with this delicious drink idea.

The grand californian craftsman has a new cocktail list, and one of the new offerings was a watermelon collins. It was made with vodka - which I can’t do - so i’ve switched it up to gin, to make it a true tom collins knock-off.

I also didn’t use watermelon syrup or puree, wanting it to hit a little lighter.

And, I also topped it off with my favorite club soda.

It’s literally freshness in a glass.

Ingredients:

1 half english cucumber, end trimmed

4 oz gin

6 oz watermelon juice

juice of 1 lime

4 oz club soda

Directions:

Peel cucumber half into long strips from each side, until you hit seeds. Reserve 4 strips for garnish.

Place the rest of the cucumber peels into a shaker.

Add gin, watermelon and lime juice to the shaker. Muddle.

Add ice, and shake until chilled and combined.

Add a handful of ice to two collins glasses.

Skewer two cucumber slices on each of 2 toothpicks. Place one in each glass.

Pour shaker contents into glasses, and top with club soda.

Stir to combine.
