Ingredients:

4 oz pancetta

2 small heads of cauliflower, chopped

1 apple, cored and chopped

1/8 cup resh thyme leaves

2 Tbsp evoo

1/2 tsp salt

1 clove garlic, minced

Directions:

Preheat oven to 400.

Line a baking tray with parchment paper.

Place pancetta on paper, and roast for 10 minutes.

Toss together roasted pancetta, cauliflower, apples, thyme, evoo, salt and garlic. Pour onto parchment paper.

Roast for 20 minutes. Toss vegetables with tongs. Roast for an additional 20 minutes.

Remove from oven and serve.
