sangria style peach mojito
Another day, another sangria.
And this one’s based on a classic mojito, with a riff that incorporates all the fresh peaches of stone fruit season.
Ingredients:
24 mint leaves
juice of 2 limes
1 sliced lime
1 cup white rum
1/2 cup peach schnapps
1/2 cup fresh peach juice
26oz club soda
Directions:
In a large pitcher, muddle mint leaves with the handle of a wooden spoon.
Add in lime juice, sliced limes, sliced peaches, rum, schnapps and peach juice. Stir to combine.
Refrigerate for 6+ hours before serving.
Add club soda, and stir to combine.
Add handful of ice to each glass, add slices of peaches and limes, and top with liquid.
