marinara sauce

Everyone needs a good basic marinara sauce… and yes, that includes you.

This is simple, easy, and so flavor forward. You can add it to meatballs, add meat of your choosing, cheese, chicken, cream… the list goes on and on. It also makes for a great pizza sauce or dip.

I like to to keep a batch frozen at all times for quick and easy weeknight meals.

Ingredients:

2 Tbsp evoo

1/2 yellow onion, grated

4 cloves of garlic, minced

10 basil leaves, rolled and thinly sliced

3/4 cups white wine, split use

1 cup chicken stock

16 oz strained tomatoes

1 tsp salt, plus extra as needed (taste, taste, and taste again)

Directions:

In a large sauce pan, heat evoo on medium heat.

After a few minutes turn head down to low and add onions and garlic. Stirring to prevent burning.

After onions and garlic are fragrant and softened add in 1/4 cup white wine.

Stir until liquid is absorbed.

Add in the strained tomatoes, rest of the white wine, chicken stock, basil, and 1 tsp salt.

Bring to a boil.

Once boiling, reduce heat to simmer.

Let sauce simmer at least 1 hour. You will notice it reduces, thickens, and becomes a cohesive sauce. This is what you want.
