taco queso
I love a good queso. It’s the melty cheese for me.
And while a traditional queso is comprised of white cheeses, peppers, onions and usually chorizo in some iteration… this queso? It’s what happens when you take classic taco ingredients and melt them all together to create a dip.
Ingredients:
1 Tbsp avocado oil
1 jalepeno, diced
1 red onion, diced
2 cloves garlic, minced
1 lb ground beef
3 Tbsp flour
1 packet taco seasoning or homemade
1 1/2 cup milk
2 cups shredded cheddar cheese, 1 cup reserved for topping
2 cups mexican blend cheese
1 cup sour cream
sliced olives
1 roma tomato, diced
cilantro leaves
Directions:
Preheat oven to 350.
Heat avocado oil in a large, oven safe, sauce pan over medium heat until shimmering.
Add in jalapeno, onion, and garlic.
Sauté until onion translucent and veggies have softened.
Add in ground beef, breaking it up until combined.
Cook until beef has browned.
Add in taco seasoning and flour. Stir to combine.
Add milk.
Stir in sour cream.
Add 1 cup cheddar and mexican cheeses. Stir to combine.
Once cheese has melted, top with remaining cheddar cheese, tomatoes, and olives.
Place on middle shelf in oven. Bake until cheese has melted and top starts to brown. About 30 minutes.
Remove from oven and top with cilantro leaves.
Serve with chips.
