pork loin roast

Pork loin roast. It’s not your typical prime rib roast, but it is the perfect choice for a holiday dinner, sunday supper, or all around comfort meal.

Roasted over (and then served with) brussel sprouts, shallots, and goldenberries, this is the perfect seasonal flavor bomb.

Ingredients:

3 shallots, quartered

1 lb brussle srpouts, halved

6 oz goldenberries, halved

2 cloves garlic, sliced

1/2 bunch thyme

3 - 4 lb pork loin roast

evoo

salt

tj’s onion salt

pepper

1 cup beef broth

1/4 cup rose vinegar

1/2 cup rose wine

Directions:

Preheat oven to 450.

Scatter brussels, shallots, garlic, gooseberries, and thyme into a large roasting pan.

Rub pork loin with evoo, and a generous amount of salt, pepper, and onion salt. Place on top of vegetables and fruits.

Add in broth, vinegar, and wine.

Cook for 15 minutes.

Turn heat down to 375. Roast for 45 minutes - or until an oven thermometer reads 145. Remove from the oven and tent to rest about 15 minutes before carving.
