peach habanero tomatillo margarita

It’s a mouthful. But it’s a delicious mouthful.

Also a play on my favorite margaritas from puesto.

Ingredients:

6 tomatillos

juice of 1/2 lime

2 oz tequila

1/2 oz agave

2 oz peach juice

sliced habanero pepper, seeded

lime

tajin

Directions:

Peel and wash tomatillos. Quarter and add to a blender.

Puree until broken down. Strain puree over jar with cheesecloth. Discard pulp.

Add 1 1/2 oz tomatillo juice, lime juice, tequila, agave and peach juice to shaker. Add ice. Shake until well chilled.

Rub lime over glass lid, and rim with tajin.

Muddle 3 - 4 habanero slices in bottom of glass. Add ice.

Fill will shaken margarita and serve.
