blistered cherry tomato pasta
What isn’t better than a quick and easy meal that can be thrown together without too much thought, utilizes fresh ingredients, and tastes fantastic.
Ingredients:
1 Tbsp evoo
3 cloves garlic, minced
1 green onion, sliced
1 pint cherry tomatoes
pinch of salt
1/4 cup white wine
2 Tbsp sliced basil
1 carton bucatini, cooked according to directions
1/2 cup reserved pasta water
fresh basil
4 oz burrata
Directions:
Heat evoo to shimmering over medium high heat in a large sauce pan.
Add garlic and onion, stirring until slightly translucent. Add cherry tomatoes. Sprinkle with pinch of salt.
Turn heat to medium low. Cook until tomatoes have blistered and popped.
Add sliced basil, wine, and reserved pasta water. Cook until reduced and tomatoes have created a sauce.
Add bucatini to pan. Stir to coat.
Add pasta to plates and top with torn burrata and fresh basil leaves.
