mascarpone dip
Last minute get together? People headed over spur-of-the-moment?
No fear - this easy (and festive) dip takes only moments to throw together - and you most likely have most of the ingredients on hand.
Ingredients:
1 carton mascarpone
raspberry/cherry preserves (or similar flavor)
pomegranate arils
fresh rosemary, minced
honey
evoo
maldon salt
pita chips
Directions:
Use an immersion blender to whip mascarpone until creamy.
Spread onto a serving dish.
Layer with preserves.
Sprinkle arils and rosemary over the top.
Drizzle with honey (here’s where you could get fancy and swap out hot honey should you so choose) and a splash of evoo.
Sprinkle finishing salt over top.
I like to serve with thin pita. chips
