blistered tomatoes

Then look no further than these blistered tomatoes. A quick pan roasted dish that you won’t stop eating, or making.

Ingredients:

evoo

handful of basil leaves, thinly sliced

4 cloves of garlic, minced

1 pint cherry tomatoes on the vine

8oz burrata ball, skin removed

fresh basil

maldon salt

Directions:

Heat a slight layer of evoo in a sauce pan over medium low heat until shimmering. Add sliced basil and minced garlic, stirring to combine. Immediately add in tomatoes, still on the vine, swishing around to coat with oil, basil and garlic.

Pan roast until tomatoes start splitting, and slightly brown.

Remove tomatoes from pan and place on spread out burrata. Pour olive oil, garlic, and cooked basil over tomatoes. Top with fresh basil and a sprinkle of maldon salt.
