quick tips: easy lunch scramble

When I tell you this is my favorite lunch. I mean exactly that. There is nothing I love more than grabbing some “almost on the way out” veggies, sautéing them in butter, and then smothering the whole thing with scrambled eggs.

Let me tell you. It’s the easiest.

Pick whatever you have in your fridge. You do you.

Melt 2 Tbsp of butter in a non-stick skillet. Then add your veg and meat options.

My fav’s? Zucchini, mushrooms, tomatoes, ham — all diced up. Add to melted butter, and let soften.

Meanwhile, whisk a couple of eggs. Add to pan.

Sprinkle with salt. Move around until eggs are cooked.

Add to plate. Sprinkle with shredded cheese (my go-to is cheddar), and fresh chives.

I like a sliced avocado and some salsa on the side. But that’s just me. You do you.
