pistachio heirloom tomato salad

I love tomatoes. I pretty much add them to anything that doesn’t have tomatoes. Caesar salads, tuna melts, etc. etc. The list goes on. And I don’t have to add them to anything. One of my favorite snacks since childhood is simply sliced tomatoes with a little bit of finishing salt. Perfection.

All this to say, why I am so thankful to live in a climate where tomatoes can be grown year round.

This salad is a little more upscale that just salt and tomatoes. But not much more. And it’s the perfect reminder in the middle of winter, that summer will be upon us before we know it.

Ingredients:

2 heirloom tomatoes, sliced

evoo

rose vinegar

ground pink peppercorn

stracciatella

finishing salt

pistachios, chopped

Directions:

Place tomatoes on a large plate or platter.

Drizzle with evoo and vinegar.

Sprinkle with ground peppercorns

Spread stracciatella over the top.

Sprinkle with finishing salt.

Top with pistachios.
