broiled peach bellini

A bellini is pretty darn good on it’s own. But broil those peaches and add in some tarragon?

Chef’s kiss.

Ingredients:

1 peach, halved and pitted

8 tarragon leaves

2 Tbsp honey

1 oz gin

brut cuvee sparkling wine

Directions:

Preheat oven to broil.

Place peach halves on a oven safe pan, cut side up.br

Broil until tops are caramelized (just a minute or two).

Let cool.

Peel peach and add the rest to a glass jar.

Add in tarragon, honey, and gin.

Use an immersion blender to combine.

Add about 2 Tbsp to each champagne flute.

Top with sparkling.
