cherry tomato and sausage tortellini
If you are looking for an easy weeknight (or weekend for that matter) meal, look no further than this tortellini. What can be simpler than taking a premade tortellini and then fancying it up by adding in fresh veggies and creating a super simple sauce.
Plus, bonus for families who have semi picky or kids who have different tastes - you can plate all componants separately for the picky ones. Something I’ll do a lot if making things I know not everyone wants to eat.
Ingredients:
2 Tbsp evoo
1 carton heirloom cherry tomatoes on the vine
1 zucchini, sliced
2 cloves of garlic, thinly sliced
¼ cup red wine
pinch of salt
½ cup chicken stock
2 Tbsp butter
2 chicken apple sausages, cooked and sliced
3 cups tortellini, cooked according to instructions
freshly grated parmesan
Directions:
Heat saucepan over medium heat.
Add in evoo. Heat until shimmering.
Add in tomatoes, and saute until blistered. Turn heat to low.
Add in garlic and zucchini. Saute until zucchini has softened.
Add in wine. Bring to a boil. Sprinkle with salt.
Turn down to low. Let cook until wine has reduced.
Add in stock. Bring back to a boil. Reduce heat and simmer until reduced.
Add in butter.
Once melted add in sausage, and then tortellini stirring to combine.
Serve in bowls and top with parm.
