air fyer crispy rice salad

Y’all know how I love a crispy rice salad. But this one? Can we make it easier? And yes, yes we can… we can air fry our rice. And it is glorious.

Ingredients:

1 package frozen brown rice, microwaved 3 minutes 30 seconds

sesame oil

juice of 5 limes

1/3 cup fish sauce

1 Tbsp sugar

2 tsp sambal

water to taste, about 1/4 -1/3 cup

2 handfuls of finely shredded cabbage

1/2 bunch of cilantro leaves

1 bunch of mint leaves

1/2 shallot, thinly sliced and soaked in water for at least an hour

1/2 cucumber, thinly sliced

1/4 large jalapeno, thinly sliced

handful dry roasted peanuts

sesame seeds

Directions:

Preheat air fryer. Add cooked rice to parchment lined air fyer tray. Drizzle with sesame oil.

Fry at 400 degrees. Checking and shaking tray every 5 minutes. Rice should turn golden brown and be crispy - about 15 minutes.

Shake together lime juice, fish sauce, sugar and sambal. Add just enough water to temper the fish sauce flavor. You want it strong, but not too strong.

Toss together cabbage, cilantro, mint, shallot, cucumber, and jalapeno.

Top with peanuts, and sprinkle with sesame seeds.

Pour dressing over top.

I like to serve with my bloody mary mariniated tri-tip.
