tomatotini

I’m not kidding. My obsession with tomato water has gone overboard. And thankfully some of our favorite restaurants have joined in. From dressings to drinks.

But if I can’t find it out, y’all know that I’m making it in house on the regular.

And one of my favorite ways to imbibe is via a tomatotini.

Ingredients:

1.5 oz tomato water

3 heirloom tomatoes, rough chopped

a couple pinches of salt

3 fresh basil leaves

2 oz gin

0.25 oz luxardo del santo

baby tomatoes and basil for garnish

Directions:

Toss tomatoes with salt in a fine mesh strainer. Leave over a bowl in the fridge overnight. Discard tomatoes and save tomato water collected in the bowl.

In a shaker muddle basil leaves. Add tomato water, gin, and luxardo del santo.

Add ice and shake until chilled.

Strain into a martini glass and add garnish.
