apple cabbage slaw

I’m a huge fan of slaw. Especially when it comes with a side of crispy chicken, and some briny homemade pickles.

This is one of those that was just thrown together with fresh ingredients I had on hand; but was so good that I am adding it to the regular rotation.

Ingredients:

1/2 a large head of purple cabbage, shredded

1/2 cup romaine lettuce, shredded

1 roma tomato, halved, seeded and sliced

1/4 jalepeno thinly sliced, seeds removed

1/2 apple, cored, and sliced into matchsticks

1/8 cup avocado mayo

juice of 1/2 lemon

2 tsp monk fruit sugar

1 tsp kosher salt

1 tsp trader joe’s onion salt

1 tsp black pepper

Directions:

In a large bowl toss cabbage, lettuce, tomato, jalepeno, and apple together. In a small bowl mix the mayo, lemon, sugar, salt, onion salt, and pepper until smooth. Add dressing to salad and toss to combine.
