fresh spinach & artichoke dip

I love love love artichokes, which you might have already guessed, being that there is an abundance of recipes that utilize artichokes, and a myriad of ways to cook them on this site.

And, today being national artichoke day, seems to be the perfect day to introduce another one.

This is not your normal spinach and artichoke dip, as it utilizes fresh, steamed artichoke hearts and fresh sautéed spinach. And? It’s delicious.

Ingredients:

6 cups packed fresh spinach

6 large artichokes, steamed

1/2 cup shredded parmesan

1 cup shredded jack cheese

2 cloves garlic, minced

3 Tbsp butter

1/2 cup avocado mayo

1/2 cup cream cheese

1/2 cup sour cream

2 Tbsp sliced scallions

Directions:

Preheat oven to 425.

In a small bowl, whisk sour cream, mayo and cream cheese until combined. Stir in scallions.

Heat a cast iron skillet on medium.

Cool steamed artichokes. Slice off hearts, remove choke and save leaves for dipping. Chop hearts.

Melt butter in skillet. Add washed and dried spinach, sauté until softened. Add minced garlic and artichokes. Continue to sauté, stirring all the while, to prevent garlic from burning.

Add mayo, cream cheese, and sour cream mixture, stirring to mix. Once combined, add shredded cheeses. Mix all ingredients together.

Place skillet on middle shelf in oven.

Cook for around 20 minutes, until bubbly and slightly golden.

Serve with tortilla chips, fresh vegetables, and artichoke leaves.
