So when the hubs and I first started dating, every once in a while, having no idea that I cooked, loved food, or was happiest when I was in the kitchen, he would offer to cook dinner.

He had two solid dishes (other than grilling meat), that were on constant rotation, and both involved ground beef.

This ground beef taco was his pride and joy; and although I've taken over most, if not all of the cooking duties in the last 23 years, on crazy weeknights, we (I) still make these super easy ground beef crispy tacos.

Ingredients:

1 Tbsp evoo

2 lbs ground beef

1/2 cup of your favorite salsa (his is herdez mild, mine is my own)

12 crispy taco shells

2 cups shredded cheddar cheese

1 tomato, diced

1/2 head lettuce, cored and shredded

3/4 cup sour cream,

Directions:

In a large sauce pan, heat evoo until shimmering. Add ground beef, and cook on medium until just starting to brown.

Add 1/2 cup salsa, and mix to combine. Keep cooking for an additional 5 minutes.

Assemble tacos thus. Taco shell, fill with ground beef mixture, top each taco with 1 Tbsp sour cream, a handful of lettuce, a handful of shredded cheddar cheese, and a sprinkling of tomatoes.

That’s it. Super easy. And? Always a family (crowd) pleaser…
