Homemade humus is a huge hit around here for everyone, but for me, the true star of a greek meal is tzatziki.

This tangy, garlicy, dill and cucumber sauce is the best for spreading on pita, dipping chicken and lamb into, and topping salads and sandwiches.

I adore tzatziki.

Ingredients:

1 large cucumber

1/4 tsp salt

24 oz greek yogurt

1 bunch fresh dill

2 Tbsp white wine vinegar

2 cloves garlic, minced

1 Tbsp evoo

1/2 tsp salt

2 tsp sugar

Directions:

Using the small holed side of a box grater, grate the cucumber over a fine mesh strainer. Use a kitchen town to press out moisture from the cucumbers. Sprinkle with 1/4 tsp salt and let sit for an hour. Press additional moisture out and add drained cucumbers to a medium sized bowl.

Add all other ingredients to cucumbers, and stir to combine.

Chill for at least 2 hours before serving to allow flavors to come together.
