monte cristo

I love the combo of sweet and savory. It’s why I so often have fruit in my salads. And there is nothing more sweet and savory than a monte cristo sandwich.

If you haven’t had a monte cristo sandwich, you are missing out.

It takes a plain old ham and cheese sandwich, dips the whole thing in french toast batter, tops it with powdered sugar and is served along side jam. I mean… hello!

Ingredients:

10 eggs

1 cup heavy cream

1 pinch of salt

1/8 cup of granulated sugar

6 slices of port salut cheese

12 slices of ham

12 slices of sourdough bread

1 Tbsp ghee

dijon mustard

mayo

powdered sugar

triple berry refrigerator jam

Directions:

Preheat oven to 400.

Preheat a large flat griddle pan to medium low heat.

In a large, high-edged baking pan, whisk together eggs, cream, granulated sugar and pinch of salt.

Assemble sandwiches as follows. Spread a bottom slice of bread with dijon, top with a slice of ham, a slice of cheese, and another slice of ham. Spread the top slice of bread with mayo, and set atop ham, mayo side down.

Coat each sandwich on both sides with egg mixture.

Melt 1 Tbsp of ghee on griddle.

Place sandwiches on griddle, and cook each side until golden brown.

Once sandwiches are browned on both sides, place on oven safe baking sheet and place in oven until cheese is fully melted, just a few minutes.

Remove sandwiches from oven, sprinkle with powdered sugar, and serve alongside jam, making sure to eat a bit of jam with each bite.
