quick tip: melon ballers make excellent stone fruit pitters

Lately our csa has been chock full of absolutely wonderful peaches and nectarines.

This is terrific, because I’m able to make use of them to create all sorts of savory and sweet dishes, sauces and salads.

If you aren’t used to cooking with stone fruits (as opposed to eating them straight) they can be a little intimidating to prepare. Mostly because their pits can be difficult to remove.

You can always slice around the pit, cutting off four pieces of fruit (one from each side), like you would with a mango… but there is another way.

You can slice all the way around the the fruit, twisting one half off of the pit, then you can use a melon baller to scoop out the entire pit from the otherside.
