Who doesn’t love a good club sandwich?

And while a traditional club will have three pieces of bread, I eschew the middle piece, because a) I think it takes away from all the other flavors and b) by using a crispy ‘breaded’ fried green tomatoes you have an extra bread element anyway.

And trust me, it all works!

Ingredients:

classic grilled chicken

cooked bacon

avocados, pitted, peeled, and sliced

fried green tomatoes

sourdough bread

shredded romaine lettuce

1 egg

1 tsp salt

1 tsp dijon mustard

juice of 1 lemon

1 clove of garlic, rough chopped

1/4 cup chopped parsley

3 scallions, rough chopped

3/4 cup avocado oil

Directions:

Add egg, salt, dijon, juice, parsley, garlic, scallions and avocado oil to a 2 cup mason jar. Using an immersion blender submerged to the bottom of the jar, turn it on and slowly bring it up and blend ingredients into an aioli.

Spread aioli on one side of two slices of bread. Cover one side with shredded lettuce. Top with fried green tomatoes, bacon, chicken breast, avocado slices and final slice of bread. Halve and serve.
