(air) fried green tomatoes

Who doesn’t love fried green tomatoes?

It’s such a great way to showcase these tart firm tomatoes.

And we call all pretend we are from the south.

Ingredients:

4 green tomatoes, tops and bottoms removed, sliced into 1/8 - 1/4 inch rounds

2 cups pork panko (can substitute regular panko for vegan or vegetarian)

2 eggs (can use an egg substitute for vegan)

1 1/2 tsp trader joe’s onion salt

1 tsp paprika

1 tsp salt

1 tsp dried italian parsley

avocado oil spray

Directions:

Preheat your air fryer to 400 degrees.

In a medium sized bowl combine panko, salt, onion salt, paprika, and parsley.

In a second medium bowl, whisk eggs.

Spray air fryer tray with avocado oil.

Dip tomato slices first into eggs, flipping to coat both sides, then into the panko mixture. Use a dry hand to pat panko on both sides. Remove coated tomatoes and place on air fryer tray.

Continue until all tomatoes have been coated, or tray is full.

Air fry until golden and crispy, about 10 - 12 minutes.
