homemade chorizo

Chorizo, chorizo, that spicy mexican mystery meat that makes everything taste better.

Perfect in tacos, burritos, on eggs, in salads, nachos and (in my opinion) a necessity for queso fundido.

What was brought to my attention, is that while it is absolutely delicious, one doesn’t always want to eat all the mysterious ingredients found within. So, what’s a girl to do? But obviously, make her own.

The spice level on my chorizo is not quite the level you will find to purchase, but that’s just to make it family friendly for the two kiddos of mine that aren’t obsessed with spice. Feel free to up the chili and pepper amounts to your preferences.

Ingredients:

3 Tbsp avocado oil

1/4 white onion, grated

1 lbs ground pork

1 clove garlic, grated

1 tsp salt

1/4 tsp black pepper

1 1/2 tsp ancho chili powder

1/2 tsp trader joes onion salt

1/2 tsp mexican oregano

1/2 tsp ground coriander

1/2 tsp paprika

1/2 tsp cumin

1 Tbsp apple cider vinegar

Directions:

Heat a cast iron skillet to medium high heat. Bring oil to temp, until just shimmering.

Combine salt, pepper, chili, onion salt, oregano, coriander, cumin and paprika in a small bowl.

Add grated onion to the oil, and stir for 1 -2 minutes, just to soften. Add ground pork. Stir to combine.

When pork is still pink, but starting to brown in areas, add garlic and vinegar. Stir to combine.

Add spice blend. Combine thoroughly. Sauté until pork is cooked through.
