queso fundido blanco

As much as we try to limit dairy for sensitive stomachs around here… if there is one thing I am willing to brave next day stomach pains for, it’s queso fundido.

Is there really anything better than spicy, melty cheese running a line from bowl to your mouth? Especially when scooped up by tortillas, and, quite possibly topped by chorizo?

I think not.

Ingredients:

1 1/2 Tbsp avocado oil

1/4 large jalapeño, minced

1/4 onion, minced

1/2 red bell pepper, minced

1 clove garlic, grated

2 cups shredded white cheddar cheese

2 cups shredded jack cheese

2 Tbsp tequila

homemade chorizo (optional… but really, add it)

Directions:

Heat oil to shimmering in a cast iron pan, over medium high heat.

Add onion and peppers. Sauté until just softened. Add garlic.

Stir to combine. Turn heat down to medium low.

Add in cheese, stirring to combine until almost melted. Add tequila.

Continue to sauté until cheese is completely melted.

Serve immediately, stirring in chorizo if so desire.

Serve with warm corn and/or flour tortillas, chips, and or vegetables of your choosing.
