air fryer crispy zucchini

I was never the midnight pizza orderer. But what I was, was the midnight carls jr. drive thruer who would always, and I repeat always, order the crispy zucchini. Not sure if I was trying to convince myself that it was a way to eat vegetables and not fries, but for whatever reason, I loved them. And I dipped them in ranch… so there went the healthy aspect. And I mean, who orders zucchini at a fast food restaurant anyway?

However, my homemade version? Is healthier. It uses pork panko instead of heavy breading (however you can choose to use regular panko if you follow a vegetarian or vegan lifestyle), and “fries” in the air fryer instead of oil.

Ingredients:

avocado oil spray

4 small zucchinis, tops and bottoms removed and sliced into rounds

1 1/2 cup pork panko

1 Tbsp dried dill

1 Tbsp trader joe’s onion salt

1/2 tsp salt

2 eggs, whisked

Directions:

Preheat air fryer to 400 degrees. Spray basket with avocado oil.

In a bowl, combine panko, dill, onion salt, and salt.

Dip rounds in eggs, then drop into seasoned panko. Use your other hand to coat the egg washed zucchini with panko. Place panko coated rounds in air fryer basket.

Once basket is full, “fry” for 15 minutes. Enjoy.

Note: I fully recommend dipping in tartar sauce.
