slightly spicy watermelon gazpacho
Talk about your palate cleanser.
This is that perfect chilled soup, that’s fancy enough to serve at parties as a passed app in a shot glass, a full starter, or just a completely clean meal when you are trying to be at your best.
This is one of the best ways to enjoy your fresh produce, as it was meant to be.
Also, if you are looking to cut back from holiday binging… this is your dish.

Ingredients:
1 whole baby sugar watermelon, rind removed and rough chopped
1 1/2 tomatoes, chopped
2 japenese cucumbers, peeled and chopped
1 tsp salt
1/4 tsp white pepper
1/4 jalapeño, chopped
1 Tbsp white balsamic vinegar
1 Tbsp avocado oil
feta for finishing
Directions:
Add watermelon, tomato, cucumber, jalapeño, salt, pepper, vinegar, and oil to a food processor. Purée on highest level until completely puréed. Let sit and chill in refrigerator before serving.
Pour gazpacho liquid into a bowl, and top with crumbled feta.
*Note: If vegan or whole30, omit feta.
