crispy air fryer baby artichokes

Artichokes might seriously be one of my favorite veggies of all time. Of. All. Time.

And baby artichokes? Well, they’re just the best. and not just because they are entirely edible, and you don’t have to clean out the choke. Let me repeat that. You don’t have to clean out the choke.

If you weren’t aware, baby artichokes aren’t just little artichokes that didn’t grow up to be the larger version. They are their own variety of artichoke. And they are delish. These are the little goodies that you find marinated in jars in the grocery store. Mind blown, right?

Ingredients:

16 baby artichokes

1/2 lemon

4 Tbsp evoo

6 stems of thyme, stalks discarded

4 cloves of garlic, minced

1/2 tsp salt

4 Tbsp butter, melted

1/2 cup mayo, vegan mayo if you choose

juice of 1/4 lemon

Directions:

Preheat air fryer to 390.

To prepare baby artichokes, remove the stem, then cut off the top 1/3. Remove all dark outer leaves until you get to the light green middle. Cut chokes in half. Immediately after cutting, rub with 1/2 of lemon. Repeat with each artichoke.

Whisk together evoo, thyme, garlic, and salt. Toss with artichoke halves.

Place artichokes in air fryer. Air fry for 20 minutes, tossing every few minutes.

While chokes are cooking, whisk together butter, mayo and juice of 1/4 lemon for a dipping sauce to serve with crispy artichokes.
