pan seared halibut

Perfectly seared, crispy fish. Does it ever get any better, or fresher for that matter, than that?

This halibut is so tender that it falls apart by the merest touch of a fork, yet retains that crisp sear that everyone one wants.

Ingredients:

1/4 tsp salt

1/4 tsp white pepper

3/4 tsp oregano

1/2 tsp trader joes onion salt

1/2 tsp paprika

3 Tbsp evoo

8 4 oz pieces of halibut, no skin

4 Tbsp unsalted butter, cut in 8 1/2 Tbsp pats

2 cloves garlic, peeled and smashed

1/4 cup chicken stock

juice 1/2 lemon

Directions:

Pre heat oven to 450.

Whisk together salt, pepper, oregano, onion salt and paprika.

Pat fish dry, and rub with spice blend.

Heat evoo on medium high, in a large cast iron skillet, until shimmering.

Add fish to pan. Sear 5 minutes per side. Remove from stove. Place one pat of butter on each piece of fish. Add garlic and chicken stock to pan.

Place pan in oven to finish cooking. And cook for 5 minutes in oven.

Remove pan from oven. Squeeze lemon over fish before serving.
