heirloom tomato and watermelon salad with tomato water vin

Welcome to my newest summer obsession.

Heirloom tomatoes, seedless watermelon, a mix of pickled and raw shallots, garden grown cucumbers and lots of fresh mint. Top it all off with homemade tomato water vinegarette and you get a fresh and vibrant salad that tastes like it was fresh picked… (because honestly? most of it was).

Ingredients:

2 large heirloom tomatoes, rough chopped

1 ½ tsp salt

2 oz champagne vinegar

3 oz avocado oil

2 shallots, thinly sliced

½ cup apple cider vinegar

½ cup water

1 Tbsp sugar

pinch of salt

2 heirloom tomatoes, sliced in wedges

seedles watermelon, balled or chopped to equal amount of tomatoes

1 baby cucumber, thinly sliced

30 fresh mint leaves

Directions:

Place a fine mesh strainer over a large bowl.

Add in chopped tomatoes and 1 ½ tsp salt. Mix to combine.

Let sit in fridge for 3+ hours to drain.

Add 2 oz of tomato water, champagne vinegar and avocado oil to a jar. Shake to combine.

In a small dish or lidded container add 1 sliced shallot. Top with apple cider vinegar, water, and sugar. Stir to combine. Let sit for 3 hours in fridge. Drain.

Combine tomato wedges, watermelon balls, cucumber, raw and pickled shallots, and mint.

Top with tomato water vin to taste.
